Cheesecake-stuffed Strawberries

The oldest known cheesecake recipe is credited to a Roman politician in the 1st century, but supposedly this treat is even older than that—supposedly served to athletes at the first-ever Olympic Games. Pretty impressive to think that this dessert has been a classic for thousands of years!

For a healthy, summer-y taste of this timeless treat, you just have to try these juicy, fresh strawberries stuffed with cheesecake filling.

INGREDIENTS

  • 12 fresh strawberries
  • ⅛ tsp of vanilla extract
  • 4 Tbsp of fat-free cream cheese, softened
  • 3 tsp Stevia (or any zero calorie sweetener)
  • 1 low-fat graham cracker crushed into crumbs

DIRECTIONS

  1. Cut the tops off the strawberries and with a sharp knife cut an X – do not cut through the strawberry. Gently remove a little strawberry from the center.
  2. In a small bowl mix – cream cheese, Stevia and vanilla.
  3. Place mixture into a pastry bag or a plastic bag with the tip cut off and pipe in the filling.
  4. Roll top of strawberries in graham cracker crumbs.
