Organic Mashed Cauliflower

Cauliflower is a superfood that comes in many shapes and colors – did you know that it’s not uncommon to find orange, yellow, and even purple varieties? This brightly-colored cauliflower still tastes the same and has all the nutrition we know and love.

While we love adding color to our plates, our favorite thing about this veggie is its versatility. Try making this delicious side with dinner – it’s super healthy, but we won’t tell if you don’t!

INGREDIENTS

  • 1 medium head cauliflower, core removed, cut into small pieces
  • 1 oz. cream cheese, softened
  • ¼ cup grated parmesan cheese
  • 2 tbsp. unsalted butter, softened
  • ½ tsp. garlic powder
  • ½ tsp. kosher salt
  • ¼ tsp. black pepper
  • ½ tsp. chopped fresh chives

DIRECTIONS

  1. Fill a large stock potwith water and bring to a boil over high heat. Add in small cauliflower pieces and cook for about 10 minutes, or until the cauliflower is fork tender. Drain the cauliflower and pat the pieces dry with paper towels. You want the cauliflower to be as dry as possible.
  2. With your food processoror an immersion blender, combine cooked cauliflower with cream cheese, parmesan cheese, butter, garlic powder, salt, and pepper. Pulse or blend until the mixture is smooth and fluffy. Garnish with chopped chives.
