Pineapple “Nice” Cream

Tropical foliage is a far cry from the coniferous forests of North America, but the explorers of yesteryear didn’t know that! Pineapples got their name from early Spanish colonizers who arrived in South America and immediately identified what they thought were pine cones… Then they got a little closer and realized they’d found an edible fruit! They named these tasty tropical treats “pineapples,” and the name stuck.

Mix up your after-dinner treats with some of this delicious “nice” cream!

INGREDIENTS

  • 1 16 oz. package frozen pineapple chunks
  • 1 tbsp. lemon juice or lime juice
  • 1 cup frozen mango chunks

DIRECTIONS

  1. Process pineapple, mango and lemon (or lime) juice in a food processor until smooth and creamy. (If using frozen mango, you may have to add up to ¼ cup water.) For the best texture, serve immediately.
